According to Official Guinness Records,

The fastest time to peel and eat a lemon is 8.25 seconds and was achieved by Ashrita Furman (USA) at the Songs of the Soul offices in New York City, New York, USA, on 3 May 2010.
The lemon weighed 5.2 ounces. Mr. Furman beat his own previous record of 9.84 seconds.
