According to Official Guinness Records,

The most nationalities in a swimming pool is 82 and was achieved by Les Roches International School of Hotel Management (Switzerland), in Bluche, Switzerland, on 8 September 2012.
All the participants were students at Les Roches International School of Hotel Management. They provided their passports as proof of their nationality.
