According to Official Guinness Records,

The most oysters opened in one minute is 39, and was achieved by Patrick McMurray (Canada) on the set of FOX’s “The F Word with Gordon Ramsay” in Santa Monica, California, USA, on 5 June 2017.The attempt took place on the historic Santa Monica Pier, with Gordon Ramsay challenging current Guinness World Records title holder McMurray in a head to head competition.
