According to Official Guinness Records,

The most stairs climbed on a unicycle in 30 seconds is 56 and was achieved by Peter Rosendahl (Sweden) at the Millennium Monument in Beijing, China, on 1 November 2007.
The record was filmed by CCTV for Zheng Da Zong Yi - Guinness World Records Special.
