According to Official Guinness Records,

The fastest time to model five balloon sculptures blindfolded is 1 min 1.3 sec, and was achieved by Ryan Tracey (Ireland) on the set of Britain's Got Talent (ITV) auditions, in Birmingham, UK, on 4 February 2017.
