According to Official Guinness Records,

The most people hopping on one leg simultaneously is 1,289, and was achieved by Smart Fit (Brazil) during the event Réveillon na Paulista, in São Paulo, São Paulo, Brazil, on 31 December 2017.The organizers selected the 31st December for the record attempt day in order to motivate people to start the new year on the right foot.
